Steak Stuffed with Baked Mushroom Recipe

Ingredients : Serves 4~5

25 g/1 oz/2 tbsp butter

1 chopped onion
100 g/4 oz finely chopped mushrooms

5 ml/1 tsp chopped thyme

50 g/2 oz lean bacon, rinded and chopped
25 g/1 oz/0.5 cup fresh breadcrumbs

10 ml/2 tsp chopped parsley
A pinch of salt

Freshly ground black pepper

900 g/2 lb piece of lean rump steak, trimmed

Method :

Use a pan to disssolve the butter and briefly fry the onion until soft but not too brown. Mix in the bacon and mushroom and cook for about 2~3 minutes, remove from the stove and mix in the thyme, parskey and breadcrumbs. Then season according to taste. Leave it aside to cool. Cut the steak in half lengthways and fill the cutting with the prepared stuffing, before tieing with string. Using a reheated oven roast at 200°C/400°F/gas mark 6 for about 30 minutes until cooked according to your liking.
